Jamie brings focus & creativity to the menu, having spent time in Vietnam after university he returned with his blueprint for Banh Wagon. Day-to-day Jamie is in the prep kitchen and on site at various pop up locations.
After finishing university, Matthew worked for a time as a structural engineer. In October 2020, he was approached by Jamie with the opportunity to join the fledgling business on a full time basis. Since then, he has used his analytical skills to increase efficiency and productivity of the business.
Matthew and Jamie have know each other since school. Quite simply, they are great friends working together to make great food.
Born out of lockdown Banh Wagon first hit the streets of Bristol in 2020 working out of a small prep kitchen and gazebo.
They initially delivered Vietnamese street food to the South West, and selling monthly at their local Clevedon market. Since then they have expanded the scope of their business by hitting up all the biggest street food locations in Bristol whilst striving to improve their menu, keeping dishes fresh, exciting and unique.
Our aim is to bring Vietnam’s most coveted sandwich, the Bánh mì, to South Wales. We provide the highest quality marinades and carefully cooked meats combined with fresh coriander, chilli, carrot & daikon, that creates a clean yet vibrant hit of south east Asian flavours. With a delicious range of meat and vegan fillings, all items are freshly prepared and guarantee an explosion of flavours that’ll transport you straight to the streets of Vietnam.
Our braised, grilled, and fried filling options are showcased in perfectly toasted baguettes and elevated with a combination of savoury sauces and the classic crisp, fresh and pickled vegetables that brings it home.
We also have a range of home-brewed iced green tea – Trà Đá: Vietnam’s most thirst-quenching drink and unsung hero, for the full street food experience.
